Specifics:

Delfino Plaza: 15 secrets, 100 coin sprite, 240 blue coins in the game, and since you trade 10 for a shine sprite, that's 24 more, so 40 in Delfino Plaza, also 19 blue coins
Courses: 8 level w/1 sprite, 2 secrets, 30 blue coins, and 100coin sprite for each course
Delfino Airstrip: The shine you get at the very beginning, and, after you beat Bowser, you can go back and get a 100-coin sprite (and there's 1 blue coin there)
Corona Mountain: 10 blue coins.
