Okay, first, complete the hotel you like in Career mode. Then, save and return to title screen. Select 'Free Play', choose the hotel and the requirements to beat the level. They can be whatever you want. Then, when you complete a day, save it in a game slot. When you complete the requirements, you can just go to Saved Games on the menu, select the game slot and there you have it. You can keep playing for as long as you want on the same hotel with the same money/furniture/decoratio ns/etc.
