 when he hits you with a blue attack, you just press no buttons and she will block. when he hits you with a gold attack, that's a strong attack, so you hold down (i think it's R1... or R2). That's pretty much all you need to know. He shoots things..

 also, i found if you go to the library and unlock the correct pages, then it reveals the symbol needed so when you do dressage it is no longer a question mark but says the symbol as you ride through it. but same as above =)
